Garlic & Herb Sirloin Steaks with Grilled Sweet Potato Salsa

4 Smithfield® Roasted Garlic & Herb Pork Sirloin
1 fresh pineapple, peeled, cored, and sliced into ½ - inch thick rings
1 sweet potato, peeled and cut into ¼-inch thick slices
1 (15 oz.) can no salt added black beans, rinsed and drained
1 lime, juiced
1/4 cup chopped fresh cilantro
2 tablespoons chopped red onion
salt and pepper to taste (optional)
1. Heat charcoal or gas grill to about 375°F. Grill pineapple and sweet potato slices until char marks have formed on each side, about 5 minutes. Remove and let cool.
2. Dice cooled grilled pineapple and sweet potato and place in large bowl. Add beans, lime juice, cilantro and onion; mix until evenly distributed. Season with salt and pepper to taste. Refrigerate until ready to serve.
3. Cut sirloin in 1-inch thick slices to make sirloin steaks. Grill 6 to 8 minutes per side until internal temperature reaches 145°F. to 160°F.
4. Remove steaks from grill and serve immediately with grilled sweet potato salsa.
